This week was a small crowd at our house. We had all gotten together for Ilissa's birthday the night before so everyone was doing their own thing on Sunday night! Ian, Katie, and our good friend, Onno, were there and Mark wanted pie, so I chose Joanna's pie crust recipe from Magnolia Table.
We have quite a history with pie crusts. I've never been able to make a decent pie crust, so for years I would buy the pre-made ones from the grocery store. Then in cooking class at co-op, I learned to make a hot water pie crust! These always came out well so I started using them. Then, Breeze shared her mom's pie crust recipe and that one is always good too! In fact, it's pretty fool proof! Last year, Ian was hanging around on Thanksgiving morning and agreed to help me make pies. We followed the directions exactly on the first crust - then started talking and Ian made another crust, kneading and playing with the dough all while we continued to talk and do Thanksgiving preparation things. At some point, we realized he had forgotten to add the water to his dough - which, by the way, was a perfect consistency as he continued to knead! I don't even remember if we tried to fix it by adding the water at the end because Breeze came in and commented on how much he was kneading the dough! Apparently, you don't work with pie crust too much or it will become tough! Well, we finished the pie anyway and as we ate all the pies later, no one could tell which one was the over-kneaded, waterless crust!! Good recipe if you can do all that and it still turns out great :)
So, on to Magnolia Table's crust. Since I was making an apple pie and it called for 2 crusts, I doubled the recipe. Well, I doubled the first ingredient, flour. I only had 1 stick of butter so it never occurred to me that I needed to double the butter and the water also! I just added the butter, followed the directions to cut it in and added the water. It was so crumbly - I just kept working with it and wondering what was wrong! I added a little more water, and that's when it dawned on me that I was doubling the recipe and had not doubled anything but the flour! No wonder it was so crumbly! Well, I didn't have any more butter so I got out the shortening and added some of that - added a little more water until it became the right consistency to roll out and continued. So, in summary, I added the wrong ingredients, didn't put it in the fridge before rolling it out, and didn't add the ingredients in the correct order! However, I have to say, that apple pie (and the crust) were great - and if I hadn't documented all these mistakes, no one would have ever known! Another great recipe that stands up to the shenanigans of this crazy cook and still turned out apple pie worthy!!
