Sour Cream Chicken Enchiladas- Magnolia Table

Inspired by the movie, Julie and Julia, our family has decided to cook through Joanna Gaines' cookbook, Magnolia Table. Since we are a family that includes 7 different separate households, this should be a fun adventure! Almost everyone has their own copy of the cookbook, so some of us may be journaling separately about a recipe we make on our own.


Family night is usually on Sunday night, several times a month, so we began our cooking journey this last Sunday with Sour Cream Chicken Enchiladas.  Admittedly, our completed enchiladas did not look quite as nice as the cookbook picture (page 192), but it was surely as tasty!!


However, in true Miller fashion, we were missing several of the ingredients to complete the recipe exactly as presented! After sending several of the guys to the store for the missing ingredients we couldn't fake our way through, we began. First, enchilada sauce. The recipe calls for green enchilada sauce and it was determined we would rather have red enchilada sauce! So, out came the Dining on a Dime cookbook for a basic enchilada sauce recipe.  I had tomato paste (instead of sauce) so we just added water and yummy spices and a can of Rotel tomatoes and started the enchilada sauce cooking! The chicken was frozen, of course, so it went into the Instant Pot and within a few minutes it was ready to debone! As I chopped and deboned chicken, two of my kitchen helpers, Matt and Ilise, stuffed the flour tortillas with chicken and cheese and rolled them up for the pan. As they stuffed and rolled, we realized that we may run out of cheese and flour tortillas. Never fear, out came the whole wheat tortillas and the cheddar cheese to supplement. So, long story short, the second pan had the "different" tortillas and both pans got supplemented with cheddar cheese in addition to the cheese called for in the recipe! Of course, no one in the family, except the two kitchen helpers, knew about these differences and devoured the second pan as quickly as the first! With twelve people here eating, we cleaned out both pans and sadly had no leftovers!!


Unanimous opinion of this recipe: GREAT! Everyone liked it and voted that we would make it again, and maybe follow the recipe exactly next time :)
